This is a small food unit that turns Assam lemon and ghost chilli (bhut jolokia) into bottled products: lemon pickle, lemon squash and hot chilli sauce.
Both crops grow in the district itself. NABARD's 2023-24 credit plan for Kamrup Metropolitan records Assam Lemon on 363 ha producing 3,439 MT. It also lists two supported farm projects in Dimoria and Chandrapur blocks, one of them on ghost chilli and pepper growing, and names agro and food processing as the district's biggest farm-side opportunity. Fresh lemons and chillies spoil quickly in the humid months, so a nearby buyer who processes them helps growers too.
You need an FSSAI licence, a clean room for washing, slicing, cooking and bottling, and tested recipes that keep well on the shelf. Ghost chilli is extremely hot, so workers need gloves, masks and good air flow. Labels must follow FSSAI rules. The hard part is keeping taste the same from batch to batch and winning shelf space in shops. Ghost chilli supply within the district may be small, so line up growers in nearby districts too.
