This business collects the milky sap (latex) from green, unripe papayas and dries it into crude papain, a natural enzyme that breaks down protein. The scarred fruit can still be sold to tutti-frutti and candy makers.
Papaya is Raipur's One District One Product. Most of the crop leaves the farm as fresh fruit, which bruises and spoils fast on the road, so growers take whatever price traders offer. Paying for latex gives them another way to earn from the same crop. NABARD's 2023-24 credit plan for Raipur puts food and agro processing at Rs 112.17 crore of credit potential.
You need an FSSAI food licence, a clean drying room with a vacuum or tray dryer, stainless steel tools, and trained tappers who make shallow cuts. The hard part is supply. Papaya grown for eating gives less latex than varieties bred for papain, so you may need to sign up farmers to grow a papain variety on part of their land. Latex must be dried within hours and kept clean, or buyers reject it. Papaya virus disease can wipe out orchards, so work with growers in several villages. Papain prices rise and fall, so do not hold large stocks.
Sell in sealed tubs to enzyme refiners, food and medicine makers, and exporters. Send samples for testing before your first season.
