This unit slowly boils fresh milk down into rabri, and sets kulfi in small clay pots (matka) and metal moulds. It sells to wedding caterers, sweet shops, restaurants and the cart sellers who sell kulfi on the street.
Milk-based products are South West Delhi's One District One Product, and the district's own listing names rabri and kulfi among them. The dairy villages around Najafgarh are among the capital's main milk areas, so milk can reach the unit within hours of milking. The two products also balance the year: kulfi sells most in the hot months, while hot jalebi with rabri is a fixture at winter weddings.
You need an FSSAI food licence, a site where a food unit is allowed, wide boiling pans on gas burners, a milk-testing kit, deep freezers, a small cold room and an insulated van with freezer boxes. The hard parts: boiling milk down is hours of hot, skilled work; milk is scarcest and costliest in summer, just when kulfi sells most; one long power cut can ruin a freezer of stock; and cheap frozen desserts made with vegetable oil set a low price.
