Traditional sea salt pan revival and packing

This business leases an unused salt pan beside a tidal creek, repairs its mud walls and the gate that lets sea water in, and makes salt the old way, letting the sun dry shallow beds of sea water in the dry months. It sells coarse salt loose and packs cleaned salt in small bags and jars.

North Goa has old salt pans along the creeks of Bardez and Pernem, around places such as Arpora. Many now lie unused because fewer people take up the hard seasonal work. Goan homes still buy coarse sea salt for pickles and drying fish, and hotels and gift shops in Calangute and Candolim like local products with a story.

You need a registered lease on the pan, a few workers who know the old method, simple tools, a small pump and a clean packing room. Salt sold for eating must be iodised under FSSAI food safety rules, so plan an iodising step and get a food licence. Check the coastal zone rules before building any shed near the pan. The hard part is that a pan makes little salt, loose salt sells cheap, and an unseasonal shower can spoil a batch, so profit depends on good packs.
