This is a small food unit that makes Goan seafood pickles: prawn balchão, a hot and sour pickle cooked with red chillies and vinegar, along with mackerel and dried-prawn pickles. Each recipe is cooked in small batches, filled into clean glass jars and sealed.
The Cutbona jetty in Salcete is South Goa's largest fishing hub, and fresh fish reaches Margao's market daily through the fishing season. Balchão is a favourite in Goan homes, and visitors look for something Goan to take home, so there are buyers both in the district and outside it.
You need an FSSAI food licence, a kitchen with washable floors and walls, a deep freezer, a spice grinder, cooking vessels and a jar sealer. The hard part is the fish. Prices swing with the catch, quality must be checked every day, and boats stay in during the monsoon fishing ban, so you must buy and freeze stock ahead. Seafood spoils easily, so test how long each batch keeps before you send it far.
