Idukki grows the bulk of India's cardamom — GI-protected Idukki small cardamom — plus substantial black pepper, but most exits as commodity grade through traders to the Kochi auction, with the district name earning no premium. This unit builds on the cardamom, pepper and high-range spices atom and captures both the cardamom: raw → graded, branded & oil products and black pepper: raw → sterilised & extract products gaps, running curing, grading and small-batch packaging plus single-estate pepper SKUs sold direct-to-consumer and to specialty importers, where graded GI cardamom and traceable estate pepper command a real multiple over auction commodity. The honest constraints, consistent with the kept capex and payback, are tight moisture and volatile-oil control during cardamom curing (over-drying kills both colour and aroma), microbial and steam-sterilisation control for pepper to meet export limits, Spices Board certification, and building three to five specialty-importer or D2C buyer accounts before volume justifies the line. Buyers: premium spice D2C brands, single-origin specialty importers in Europe and the Gulf, and gourmet retailers. Start with cardamom for the higher unit margin; add pepper in year two.
