Indore is one of the country's biggest namkeen centres. NABARD's 2023-24 credit plan for Indore says the district makes about one-third of India's namkeen. Deep frying is at the heart of that trade, and the city's food streets, sweet shops and hotel kitchens fry every day too.
India's food safety regulator (FSSAI) asks large fryers to keep records of their oil and to hand spent oil only to approved collectors. So you need that approval, a record of every pickup, a small van, drums and a simple oil-quality tester. The hard part is competition from informal buyers who pay more and resell old oil to roadside cooks. Big namkeen factories often keep topping up their frying oil instead of throwing it out, so much of your oil may come from smaller shops and hotels. Your selling price moves with edible oil and diesel prices, and stored oil is a fire risk.
