What it takes: an FSSAI food licence, a clean processing hall with chilled work tables, a blast freezer, a cold room, a vacuum packing machine and refrigerated delivery. Pick a site where fish processing is allowed, because smell and waste water draw complaints. Exports need extra registrations and plant approvals. The hard part is keeping everything cold without a break and buying well. Fish prices change daily and the monsoon fishing ban cuts fresh supply for about two months, so freeze stock ahead. Big fish-delivery apps already sell here, so win on freshness and local varieties.
