This is a small food unit that buys raw millets such as ragi, samai (little millet), thinai (foxtail millet) and varagu (kodo millet), then cleans them, removes the husk, grades them and mills them into ready-to-cook grain, flour and mixes for dosa, adai and porridge.
NABARD's 2023-24 credit plan for Coimbatore names wider millet growing in the district's hill areas as a thrust, and puts food and agro processing, the largest of its farm-linked side activities, at ₹541.86 crore. Coimbatore's workshops make flour mills and grain machines, so equipment and repairs are close by, and the state agricultural university in the city runs short courses on processing farm produce. Millet foods are popular in the city's homes, hostels and health-food shops.
You need an FSSAI food licence, a shed with three-phase power, a stone remover, a dehuller, a grader and a flour mill. The hard part is supply. Hill harvests are small and scattered today, so at first you will also need to buy from millet farmer groups in other districts. Check every lot for stones, moisture and pests, and store grain safely. Some millet flours turn stale within weeks, so mill in small batches.
