NABARD's 2023-24 credit plan for Varanasi puts dairy potential at Rs 533.81 crore, by far its biggest livestock line. The same plan says most of the 46 dairy cooperatives linked to the state's cooperative dairy are inactive, and the milk route needs rebuilding. Varanasi's sweet shops, lassi stalls and paneer makers need steady supplies of good milk, above all in festival and wedding seasons.

Farmers must be paid on time, every time, and you must catch watered milk before it spoils a whole tank. Private dairies also buy in these villages, and milk runs short in summer. Floods hit some pockets of the district, so pick a site on higher ground.
