Basmati pulao and rajma-chawal ready-to-cook kit unit

This unit buys milled basmati from local mills, grades it again, and packs it in one-kilo and five-kilo packs under your own name. Alongside, it makes ready-to-cook kits: rice with a matching spice mix for pulao or biryani, and a rajma-chawal kit with rice, red kidney beans and a Dogra-style masala.

Basmati is the district's one-district-one-product, and Jammu lies inside India's registered basmati growing area. Yet much of the crop leaves as paddy or loose rice, and the shelf price is earned by packers outside the district. Rajma-chawal is the dish Jammu is best known for, which gives the kit an easy story to tell. Rented space in the Gangyal or Digiana industrial estates, or nearby Bari Brahmana, keeps you close to the mills and the highway.

You need an FSSAI licence, a legal metrology registration for packed goods, a grader, a spice grinder and blender, and a pouch filling and sealing machine. The hard part is selling: packed basmati is a crowded shelf full of big national names, and spice mixes must taste the same every time. Check every lot you buy is true basmati, not mixed with cheaper rice. Keep the range small at first.
